Luci’s Veggie Corner:
Avocado Salad with Lime Dressing
Ingredients:
2 ¼ oz/60 g mixed red and green lettuce leaves
2 ¼ oz/60 g wild arugula
4 scallions, diced
5 tomatoes, sliced
¼ cup toasted and chopped walnuts
2 avocados
1 tbsp lemon juice
Lime Dressing
1 tbsp lime juice
1 tbsp French mustard
1 tbsp sour cream
1 tbsp chopped fresh parsley or cilantro
3 tbsp extra virgin olive oil
Pinch of sugar
Salt and pepper
Directions:
- Wash the lettuce and the arugula, if necessary. Shred the leaves and arrange in the bottom of a large salad bowl. Add the scallions, tomatoes, and walnuts.
- Pit, peel, and thinly slice or dice the avocados. Brush with lemon juice then transfer to the salad bowl. Gently mix together.
- To make the dressing, place all of the dressing ingredients into a screw top jar and shake well. Drizzle over the salad and serve.
