Luci’s Veggie Corner:

Avocado Salad with Lime Dressing




2 ¼ oz/60 g mixed red and green lettuce leaves

2 ¼ oz/60 g wild arugula

4 scallions, diced

5 tomatoes, sliced

¼ cup toasted and chopped walnuts

2 avocados

1 tbsp lemon juice


Lime Dressing

1 tbsp lime juice

1 tbsp French mustard

1 tbsp sour cream

1 tbsp chopped fresh parsley or cilantro

3 tbsp extra virgin olive oil

Pinch of sugar

Salt and pepper



  1. Wash the lettuce and the arugula, if necessary. Shred the leaves and arrange in the bottom of a large salad bowl. Add the scallions, tomatoes, and walnuts.
  2. Pit, peel, and thinly slice or dice the avocados. Brush with lemon juice then transfer to the salad bowl. Gently mix together.


  1. To make the dressing, place all of the dressing ingredients into a screw top jar and shake well. Drizzle over the salad and serve.
