Luci’s Veggie Corner: Stuffed Eggplant Slices

As a vegetarian, I’ve learned stepping out of the box and trying unique dishes is always fun – seeing as I like getting a taste for “different” cuisines, this recipe for eggplant slices excited my taste buds.


Here are the ingredients:


1 medium eggplant

4 tbsp extra virgin olive oil

1 cup grated mozzarella cheese

1 tbsp chopped fresh basil

14-oz./400 g of canned chopped tomatoes with additional added herbs



  1. Preheat the oven to 400 F/200 C.
  2. Slice the eggplant lengthwise into 8 slices. Brush the slices with oil and place on baking sheet.
  3. Bake for 10 minutes, without letting them get too floppy. Remove from the oven. Sprinkle the grated cheese and basil over the eggplant slices
  4. Roll up each slice and place the slices in a single layer in a shallow ovenproof dish.
  5. Pour the chopped tomatoes over them and cook in the oven for 10 minutes, or until the sauce bubbles and the cheese melts.
  6. Remove the stuffed eggplant slices from the oven and transfer carefully to serving plates.
  7. Spoon any remaining chopped tomatoes on or around the eggplant slices, and garnish with basil leaves. Serve while still hot.
